HONEY MUSTARD CHICKEN

A flavourful combination of chicken and vegetables

INGREDIENTS
* 6 chicken thighs with skin ( or any part of chicken of your choice)
* Sweet potato fries/ baby potatoes ( full - if small or halved if bigger)
* 1 tbsp honey
* 1tbsp whole mustard grain
* Salt to taste
* 1tsp crushed black pepper
* 1tsp dried crushed chilli
* 1tsp dried parsley
* 1 lemon zest and lemon juice
* 2tsp crushed garlic
* Veggies - peas and spinach leaves
I tried this combination of veggies which worked great for me. You can choose others like mushrooms, courgettes, sweet corns ,carrots etc
* 2 tbsp olive oil
METHOD
- Preheat oven at 220 degree Celsius.
- Mix in all the ingredients with the chicken except olive oil and veggies. Transfer it to an oven proof dish.
- Drizzle olive oil, cover it with a foil and leave it in the oven for about 35 minutes.
- take the dish out and add the veggies.
- place it back in the oven. This time without the foil.
- it’s ready to take out when you can see a charred look on the skin, spinach leaves are wilted and there’s some moisture left in the dish.
Enjoy chicken with its crispy outer layer and juicy inside accompanied with a blend of juices from flavours and veggies.
