Goodness Soup Bowl

A delicious bowl of soup with a combination of beans, vegetables, chicken(optional) and herbs

Serves 3-4 people
Ingredients:
1pound chicken breast (cut into approximately 1” cubes)
200g mixed beans or 1tin (400g) if using tinned beans*
Mixed vegetables- 1 cup ( carrots, peas, bell pepper or any other vegetables of your choice)
1 leek (chopped)
3-4 medium sized tomatoes (pulverised into thin cubes) or 1tin chopped tomato
1 medium size onion (cubed)
4 cloves garlic (chopped)
2 tbsp butter
Seasoning:
Salt
¼ tsp red chilli powder
¼ Black pepper powder
1 tsp maggi masala powder (optional)
1tsp dried parsley
1 tsp dried oregano
Method:
In a pot, saute chopped garlic and onion until it turns transparent. Add leeks fry for another minute or two. Add chicken cubes and fry for few more minutes. Now add mixed vegetables. Fry it all together on medium high heat. Season it with all the dry ingredients and continue frying. If it’s getting little burnt on the sides or the bottom, keep scraping it, it will give a nice caramelised flavour to the soup.

This should take about 5-8 minutes. Finally add mixed beans and mix in. Add two cups of water and bring it to a boil. Gently add the tomatoes and cover and cook until chicken is tender. It should take about 15-20 minutes. Avoid chicken and follow the rest for a vegetarian soup bowl.

* this refers to a mixture of green beans, red kidney beans and black eyed beans. If using dried beans they need to be soaked and boiled before putting in the soup. Tinned beans can be directly added to the soup.
Tips
You can also use Prawns instead of chicken or with the chicken.
