Homemade flat bread which accompanies any curry from the subcontinent

Ingredients:
1 teaspoon sugar
Half a teaspoon yeast
2 cups All Purpose flour or plain flour
Water to make the dough
Garnishing
2 tbsp butter
2-3 garlic cloves grated
(Mix the two together)
Method:
Mix sugar and yeast with 2-3 tbsp water and set aside for 20 minutes.
In a big bowl add the yeast mixture to the flour. Gradually add water and combine with the flour. When it combines together to form a ball, take it out of bowl and (I prefer to do this on the counter top because it works better) knead the dough. Sprinkle flour on the counter top before starting to knead. Knead for about 5minutes until it becomes really soft. When kneading the dough, before finishing use a tsp of oil and smoothen it
Cover and leave it to rest for at least 1 hour in order to allow the fermentation.

Divide into 6 portions (depending on the size of naans you prefer to make)
Roll a portion with the support of flour. On the other side heat the tawa. Apply water on one side. Stick it on the tawa and press nicely with your hands so it sticks on it properly.
Once you see bubbles, turn it over and cook it over the heat directly.
Apply garnishing using a brush once its off the tawa. Serve hot with any curry of your choice
Tips:
· Can be eaten without any garnishing or just butter. You can also apply any garnishing of your choice like- butter and finely chopped coriander or mint leaves, butter and chilli flakes
· Do not use a non-stick pan as the naan will not stick to it.
· Perfect for freezing. Put them in a freezer bag and store them. When you want to use them, wrap it in a damp cloth and warm it in a microwave for 1 minute. Comes out absolutely fresh.
