Chicken Enchiladas

Corn tortillas rolled around chicken filling, covered and baked with a savoury sauce – A Mexican dish

Ingredients:
For chicken-
2 Chicken breast (uncut)
½ cup Onion (diced)
2 tbsp Fresh coriander leaves
3 Garlic cloves
1 tsp Salt
1 tsp Black Pepper powder
For sauce-
800g Tomatoes (diced)
2 tbsp Tomato paste
1 cup Onion (diced)
2 tbsp chopped garlic cloves
¼ cup oil
Seasonings-
1 tbsp cumin powder
1 tbsp oregano
1 tbsp cayenne pepper
1 tsp black pepper powder
1 tsp chilli powder
1 tsp salt (according to taste)
For the wraps-
6 corn tortillas
1 cup Cheddar cheese
1 cup Mozzarella cheese
(these are approximate measurements for the cheese needed)
Method
Chicken-
In a pot, add chicken breast with all the ingredients and about 4 cups of water. Mix it in and bring to a boil. Cover the lid and let it boil for 20 minutes or until the chicken is completely tender. Continue cooking with the lid open, to completely dry out excess water. Switch off the flame and let it cool. Shred the chicken by pressing it with a rolling pin or pulling with a fork.
Sauce-
Add oil and diced tomatoes in a sauce pan. Let them cook for about five minutes to help release the juices. Add tomato paste, diced onions and garlic with all the seasonings in this section. Cover with a lid and let it simmer for about 10-15 minutes. Check the seasoning and adjust if needed. It should have a spreadable sauce consistency. Switch off the flame, let it cool down. Once its cooled down, blend it in a food processer to get the sauce.



Wraps-
Mix the shredded chicken with about 1 cup of the prepared sauce.
In a baking dish spread some of the sauce. Take a tortilla, place chicken, sprinkle cheddar and mozzarella cheese, roll it and place it in the dish. Continue to fill each tortilla and place it in the dish. Once finished with tortilla wraps, spread the rest of the sauce to cover the tortillas in the dish. Add the final layer of cheddar and mozzarella cheese to the dish. You can make it as cheesy as you prefer.
Bake it in a preheated oven at 200C for 15minutes.
Ready to serve!
