Bihari Tikka Bun

Street food - boneless meat coated in spices and placed in a bun


Ingredients

500g beef ( boneless chunks)

 

Veggies

1tbsp fried onions

1 tbsp ginger paste

1 tbsp garlic paste

3 tbsp raw papaya ( grind it into a fine paste)

Seasonings

2 tsp salt

2 tsp chilli powder

2 tbsp Bihari kebab masala

1 tsp cumin seeds powder

1 tsp fennel seeds powder

½ cup oil

 

Smoky flavour

A pice of coal

1 tbsp pure butter ghee


Salad

2 onions ( cut onto rings)

2 tsp lemon juice

1 tsp chopped green chillies

1 tsp salt

1 tsp red chilli powder

 

Chutney

1 cup yoghurt

½ cup coriander leaves

¼ cup mint leaves

4-5 green chillies

1 tsp lemon juice

1 tsp salt ( to taste)

 

12 brioche buns or plain ( as you prefer)

Butter

 

Method

Salad

Mix all the ingredients together and set aside for at least 1 hour.

 

Chutney

Grind all the ingredients together into a fine paste.

 

Tikka

Marinate the boneless beef chunks with all the veggies and seasonings, along with oil, in this section.

Smoky flavourPlace coal on the burner and let it burn. Place a bowl in the middle of the marinated meat. Place the burning coal and sprinkle butter ghee. Cover immediately with a lid or foil to cover and lock the smoke in. Set aside for at least 5-6 hrs . For best results marinate overnight. In a pot cover and cook till the meat is tender. Might take from 50mins - 1 hour. Cook on medium low heat . The juices released during the process should be enough to cook through the process. Tikka is ready when the meat is tender and the water is almost dried.

 


Slice a bun into half and spread butter on two sides. Place the prepared tikka on one side of the sliced bun. Top it with the salad and the prepared chutney .
